As Mother's Day is approaching, we like to get all nostalgic about those wonderful recipes and family secrets that have been carried on through generations of women. As the backbone of our families, our mothers and grandmothers have provided us with so many rich memories, many of which come in the form of delicious treats that we remember from holiday dinners and everyday creations. These culinary delights bring everyone together and make the days just a little more special. Carol Stoudt still makes her Grandma Carey's delicious seasonal Dandelion salad with hot bacon dressing for every Easter dinner. Almost every Birthday in the Stoudt family is finished off with Grandma Betty's moist Chocolate Cake (substitute coffee for water) paired with delicious butter cream frosting. We can't forget Grandma Ada's famous rhubarb pie, one of Ed Stoudt's summertime favorites! Everytime we make these family favorites we can reminisce about the amazing women in our lives, and how they have shaped us in the ways of cooking and in life.

As we approach May, we wait in anticipation of one of the East Coast's most desirable treasures...The Soft Shell Crab! As crabs grow larger, their shells cannot expand, so they molt their exteriors and have a soft covering for a matter of days. Usually around the first full moon of May, (as I learned from my fish monger years ago) we should start seeing these delicious treats in the market place. They will be delivered to Stoudts Black Angus on ice within hours of catch. From there, my staff and I will prepare them using different techniques. The first recipe is probably my favorite and the most simple of procedures. Simply flour the crabs and saute them until crisp. Fresh lemon, butter, garlic, white wine, and parsley finish this dish and it can be served as an excellent appetizer. The second recipe has ties to the Southern states, where we take the crab and dip it in beer batter (Stoudts Gold) and fry it until it is golden and crisp. Pair this with a toasted Kaiser roll (made from our Wonderful Good Market) and some herb mayonnaise spread, and you've got an inviting sandwich for any ocassion. Of course, as the weeks progress, the soft shell crabs will fade away, and we will have to wait until next year to enjoy them again. Soft shells are available frozen, but the quality and taste is so diminished. You won't have to worry about which one we are serving!

Cheese making has begun at Stoudts! Our milk comes from Jersey cows at nearby Cedar Acres Farm. Come try our very first cheese, "Eliana Fresh," a lovely fresh cheese seasoned with herbs and olive oil. We will spend the summer loading our aging rooms and look forward to sharing our wheels with you during the holiday season! Throughout the summer, we will be offering fresh cheese at the Wonderful Good Market as well as on our cheese plate at the Black Angus Restaurant and Brew Pub.

"A Make and Take" class that is just in time for your 4th of July picnic. You will learn how to create your own condiments from mustards to butters to jelly. This class will teach you how to take regular grocery store items and "doctor them up" for a gourmet taste. All materials will be provided and each participant will take home their own jar of herbal mustard!
For 3 weekends out of the year, little Adamstown turns into a bustling Antiques Mecca! This is a truly extraordinary antiquing experience as the town is booming with thousands of shoppers and dealers searching for those exceptional treasures. BEER BULLETIN
By the time this newsletter goes out we will most likely be out of our new Springtime beer, Karnival Kolsch. There may be a few cases available in a few stores, but most of our local distributors sold out of this beer very quickly. This beer was a huge success as the new spring seasonal, and we would like to thank everyone for supporting this change, and for all of the positive feedback! Due to the extreme popularity of this new style, we will most likely brew another batch of Kolsch for release sometime during the summer. We will also release this beer a month early next year to extend its availability.
Moving forward to our summertime favorite, Heifer-in-Wheat will be available in all packages from early May through most of the summer. This beer is a traditional South German Hefe-Weizen. It is unfiltered, and offers a refreshingly crisp flavor with hints of banana and clove. I use this beer to make pancakes, and they are to die for! Simply replace up to 100% of the water used to make your pancake batter with Heifer-in-Wheat, and you will be amazed at how delicious they are! This same concept can be used for waffles as well. Once you try this, you won’t feel the same about those boring old pancakes and waffles.
We are currently offering several beers as Brewer's Reserves. The first is a creation by brewer Gary Gagliardi, which is a German-style pale ale called Gemutlichkeit Ale. This beer is available on tap at the bar, as well as in cork finished 750ml bottles. The second Reserve available is our old spring seasonal, the yummy Honey Double Mai Bock. This beer is also available on tap at the bar, and in 750ml bottles for takeout. Also, I believe there are still a couple of cases of the Old Abominable Barleywine available in big bottles. Keep in mind that all of our Brewer’s Reserve beers are extremely limited, so if you want them, you should get them while you can! Keep drinking good beer, support your local brewery, and don't forget to check out all the latest news, brews, and upcoming events on our website.
